Eggless Triple Sugar Cookies


What do you do when you want cookies but don't have any eggs? Improvise of course. This recipe was tracked down here, and calls for a few basic ingredients. Some people who commented on the recipe suggested adding baking powder, and I recently learned that you can use cornstarch instead to make a chewier cookie, so I included some. I also decided to use some extra sugar and really add some flavor by using white, light brown, and dark brown sugars.

I mixed the butter an sugars first then added the remaining ingredients. The dough was very light and fluffy.


Then I scooped the dough onto cookie sheets covered in parchment paper.


I baked them for 12 minutes, until they had browned slightly.



They were very flavorful and sweet, I could definitely detect the brown sugar. They were definitely chewy and one I will make again!

Eggless Triple Sugar Cookies Recipe

Ingredients:

1 cup butter
1/4 cup sugar
1/4 cup brown sugar
1/4 cup dark brown sugar
1/2 teaspoon vanilla
2 cups flour
1 teaspoon cornstarch
1 tablespoon water

Instructions:

Heat oven to 375 degrees F. In a large bowl, beat butter and sugars until fluffy. Add vanilla, flour, cornstarch, and water. Blend well. Drop by spoonfuls onto greased cookie sheet. Bake for 10-12 minutes until light brown.
